Icing and decorating.

Icing and decorating is the most fascinating part of cake making.

Much practice is needed to become experts at icing, but some kind are much easier than others.


 So if you are looking forward towards learning how to make icing and using the icing to decorate cakes, then you are in the right place, so sit back relax, enjoy and read carefully.


Butter icing is perhaps the easiest to begin on as it is soft and does not set quickly 


Royal icing is in a class by itself, as it is used only for Christmas wedding and so special occasion cakes. this will fit into any shape and therefore lends itself to elaborate designs.

Fondant Icing is in vogue presently and it requires a lot of skillfullness and inventiveness.

How to make Butter icing 1

RECIPE:

2 king sugar

250g butter

1 teaspoon flavour(vanilla until)


 method for making butter icing


Sieve the icing sugar inside the bowl,

beat the butter with a wooden spoon until it has the consistency of thick cream, then gradually make the sugar until thick and cream,

Flavour the butter icing with a little vanilla essence,

spread as smoothly as possible over the cake with a small palette knife and design with a decorating comb,

If used for decorating purposes, put some into a forcing bag or syringe or piping set,

Using which icing head you like and

Pipe little roses or whatever you please,

NB: for chocolate butter icing, add a spoonful of cocoa powder or chocolate colouring into the cream the butter and cream well before use.


How to make butter icing 2

RECIPE:

2 sieved icing sugar

42g butter

2 teaspoonful water

A few drop of vanilla essence


Method in making butter icing 2



Beat butter and sieved sugar together until white and creamy,

Add vanilla essence and beat milk very gradually,

Add water and mix well with your hand,

Then start to coat your cake with a mixture using a palette knife,


How to make Royal icing 

RECIPE:

2 egg 

1 icing sugar

1 teaspoon lemo juice


Method for making Royal icing.

Sieve the icing sugar at least three times a 2/3 of it into a bowl keep the reminder today to be added later,

Whisk the egg whites tightly and add it to the Icing sugar a little at a time, beating hard sign a wooden spoon,

Add lemon juice, a few drop at a time, still continue beating, working in the remaining sugar by degrees,

the icing should be beating really hard for about 10 minutes until it is so still that the wooden spatula will stand up in it without falling,

Spread the icing evenly all over,

moved it over the top and round the sides until it is quiet even, a good way to get it smooth is to dip a pallette knife in hot water, shake off of the drkps and give a last sweep all over the icing with the hot wet knife,

A turning board can be used to stand the cake on if available,

Before the icing hardens, 38 around the bottom with a knife,

For a wedding cake, to coats are usually put on in this way and each coat must try thoroughly before the next one is put on.


Decorating of cakes

Beat up some royal icing as stiffy as possible,

Choose the icing head you wish to use, but it in the end of an icing syringing of forcing back and fill up the bag or syringe with icing,

Now squeeze any patterns you choose all over the cake in any design you fancy or in any design you desire,

If desired, the island can be coloured the icing can be coloured. Pink piping on a white coated cake is very effective,

By using a head with a small plane hole at the end, any wording can be written on the top of the cake,

silver balls are always an attractive addition.


How to make Fondant icing

Recipe

3 packet of icing sugar

12 tablespoon of water

3 tablespoon of gelatin

1 tablespoon of glycerine

2 tablespoon of glucose

1 tablespoon of coconut flavour

A pinch of white shortening (Crisco shortening)


Method of making fondant icing sugar 1

Sieve icing sugar into a clean bowl and put it aside,

Pick a stainless plate and measure water,

Measure gelatin into the water inside stainless and put it inside hot water on the fire, do not put the plate direct on fire,

Add glucose and mix it together,

Add glycerine,

Add flavour,

Add white shortening,

Mixed together very well and allow it to cool,

Oh it did Bit by bit into the sieved icing sugar,

Mix until it becomes a smooth dough and uniformly mixed,

keep it 8 hours or more before use you can wrap it with a polythene bag.


Then your fondant icing sugar is ready, use it to decorate your wonder plain cake and enjoy it with everyone.


How to make Fondant icing 2

Recipe

½ cup glucose / 2 tablespoonfuls 

¼ cup hot water

1 cup glycerine

1 tablespoonful gelatin

2 Icing sugar

3 tables C.M.C. powder (optional)

½ cup glucose

Method to make Fondant Icing 2

By what I measure 1,4 cup very hot water into a cup,

Pour  in one tablespoon gelatin to dissolve,

Add ½ cup glucose,add 1 cup glycerine and stir very well all together until it looks like water,

Sieve the icing sugar in a bowl and pour the mixture into it,

Mix together and knead well to form elastic dough, then roll on a board  with a rolling pin,

Roll a game with fondant fancy rolling pin,

then use it to cover your cake and press firmly to allow it glue to your cake,

Before placing the fondant unto your cake you can use jam or butter to spread your cake In order for the fondant icing to glue  on your cake,

When the fondant has glue well to your cake,cut away the excess pastry with Tracing wheel and designed the edges with a clip.


N.B: please use fondant measuring cups.

It is while kneading that you make I use of C.M.C. powder In order to make your fondant pastry form elastic dough.


Also while rolling make use of corn flour in order to prevent the fondant from sticking or grumming to l the board of working table/working surface.
